On our trip to Thailand in March, we had the opportunity to visit a coconut sugar farm outside of Bangkok. The farm is family run, and the process is divided into a few parts. They use ladders made from bamboo stalks to climb to the top of the palms and cut the flower buds to release the sap. The sap is then collected and heated until reduced and just the sugar remains. The hot fire burns all day, and is kept going with the constant addition of wood and dried palm fronds.
The woman pictured below doesn't know her exact age, but has been making coconut sugar her whole life, and only has one tooth to prove it.
