rhubarb is one of my favorites in the spring. i have recently learned this. here it is june already and i am just now getting around to posting about my mother's day pie. i used this fabulous recipe from smitten kitchen. the only thing i changed was the baking time (which seems to be an issue of discussion if you take a look at the comments). mine ended up in the oven for over an hour.
overall, this pie has a wonderful flavor. you might want to eat more than one piece. save this one for the yearly short-but-sweet rhubarb season.
