cool & creamy, for summer

banana pb smoothie

+ other than my cold escalating to a severe sore throat and no voice at all, our weekend was a success. we married off two of our favorite couples, and lived to tell about it.

+ bald head island was fantastic. it was my first time there, and i want to go back as soon as possible. there are no cars allowed on the island-- only golf carts, which makes for loads of unspoiled elegance.

+ we are headed out to minnesota to the lake tomorrow, for a long weekend (& 1 year of engagement!) and a bridal shower.

+ summer weather is officially here. we're in 90 degrees and humidity and stormy afternoons.

+ which explains the need for the following recipe...

banana peanut butter cream smoothie
adapted from cooking light

1 cup sliced ripe banana (about 1 large)
1 cup low-fat vanilla yogurt (i like greek)
1/2 cup skim milk
2 tablespoons graham cracker crumbs
1 tablespoon nonfat dry milk
1 teaspoon ground flax seed
1 tablespoon creamy peanut butter
1/2 teaspoon vanilla extract
3 ice cubes

blend all ingredients, pour into a tall glass and sip through a straw
preferably while sitting on a shady front porch

healthy and filling, delicious for those hot summer months!
