saturday morning cinnamon bread

in our house, saturdays have become 'special breakfast' mornings. we look forward to pancakes or waffles, omelettes or muffins. recently, we were planning a day full of errands and were looking for something quick to enjoy with our coffee. i love this recipe because it is so quick and simple and yields great results. i mixed the dry ingredients the night before, so all i had to do in the morning was mix in the wet ingredients and pop in the oven. by the time we were showered and dressed, we had a fresh loaf of warm cinnamon bread. (and a deliciously scented house, to boot!) the loaf also kept well for the week, providing a welcome treat to slice before work.

1 cup white sugar
2 large eggs
2 tsp. vanilla extract

1/4 cup vegetable oil
1 cup buttermilk (1 T. vinegar + milk is the name of my game)
2 cups all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt

2 T. white sugar
2 T. brown sugar
2 tsp. ground cinnamon
4 tsp. butter

1. preheat oven to 350 degrees. grease one 9x5 inch loaf pan.

2. cream sugar, oil, eggs, and buttermilk. add vanilla and mix well. in a separate bowl, sift together flour, baking powder, soda, cinnamon and salt. fold dry ingredients into wet, mixing just until combined.

3. pour half of prepared mixture into pan. in a small bowl, combine sugars, cinnamon and butter, mixing until crumbly. sprinkle half of streusel mixture over top. cover with remaining batter, and top with remaining streusel. using a knife, cut in a light swirling motion to give a marbled effect.

4. bake for about 50 minutes. bread is ready when inserted toothpick comes out clean. remove loaf from pan to rack to cool.
