how are your holiday preparations going? i dare say that i have every gift wrapped, will be doing some baking today, and have a couple bathrooms left to scrub. but all things considered, i'm rather prepared! in case you are in need of a last-minute gift for a friend or family member or even a party host, consider a batch of homemade granola.
it can easily be packaged into several gifts, and makes an impressive presentation. i'm sure you remember my granola posts in the past, but this one is my most recent favorite. extra crunchy and just lightly sweet, with a hint of cinnamon. you could even alter your spices a bit to make it more seasonal-- pumpkin pie spice, cloves, nutmeg, etc. be creative!
5 cups whole rolled oats
1 cup wheat bran (wheat germ works too)
1 cup coconut (preferably unsweetened)
1 cup chopped almonds
1 tsp. salt
1 T. cinnamon
2 T. milled flax
1 cup honey
1/2 cup coconut oil
1 T. vanilla
preheat oven to 300 degrees. in a large bowl, combine oats, wheat bran, coconut, chopped almonds, salt, cinnamon and flax. mix well. in a saucepan over low heat, stir together honey, coconut oil, and vanilla until well combined. this should just take a minute or two. pour wet ingredients into dry and mix well. spread onto foil- or parchment-lined baking sheet, and bake for 1 hour, stirring every 15 minutes or so. remove from oven and let sit until the crunch is really developed. break into pieces and scoop into jars, tie with a bow and pretty tag!
